Running out of delish (and guilt-free!) dessert ideas for Easter Sunday? ? You’re in for a treat…a delish, vegan, raw, gluten-free, and short-lasting treat.  Let’s make it!


      * 3/4 cup almonds
      * 3/4 cup cashews
      * 3/4 cup dates
      * 1 tbsp cacao powder
      * Pinch of Pink Himalayan salt

      Mousse filling
      * 2 cups cashews, soaked
      * 2 avocados
      * 1 cup coconut or other plant-based milk
      * 1/2 cup cacao powder
      * 1/3 cup maple syrup (grade B is best)
      * 1/4 coconut oil
      * Pinch of Pink Himalayan salt


      * Add nuts to food processor and process to your texture liking
      * Add in the rest of the ingredients and make a big ball of dough
      * Pat the crust down into a 9-inch glass pie dish
      Tip: bake it for 10m to make it fantastically crunchy!

      Mousse filling
      * Soak cashews for at least 1/2 hour and drain
      * If you have a Vitamix, blend everything together. If you don’t, blend cashews first, adding a bit of milk at a time for the smoothest consistency. Add the rest after and blend
      * Add filling to the crust and make it pretty!
      * Freeze for 1 hour and devour it ?
      Tip: mix in 1/4 cup cocoa nibs after blending for a lovingly crunchy texture!

      Yield: 8+ servings. Happy Easter everyone!
